Fancy Goulash
When I was a kid, Mom often used a mixture of leftovers from the fridge to add to her “goulash.” This is the version my family loves now.
1 pkg gluten-free macaroni
1 lb ground beef
1 lb sausage
lg can tomato sauce
14.4 oz can diced tomatoes
1 lg onion, diced
2 tsp Italian seasoning
1 tsp salt
1 tsp black pepper
Any of the following:
chopped green pepper
sliced baby zucchini
chopped fresh tomato
canned or fresh mushrooms
sliced black olives
Boil macaroni 2 minutes, then let sit off the burner with a lid on but open just a little – for about 7 more minutes. Drain.
Brown ground beef, sausage and onion and drain. In a large pan combine macaroni, meat and onion, tomato sauce, diced tomatoes, other vegetables and seasonings. Stir gently and warm for 10 minutes with the lid on.
Tell your kids this is a fancy dish from Hungary!
