Silly Sally’s Stroganoff

This is an easy crockpot meal. Prepare it in the morning and enjoy the delicious smell all day in your kitchen.

small beef roast, cut in small strips
1 large onion, cut in rings
2 cups mushrooms, sliced
2 cups beef bouillon broth (made with Knorr Caldo de Res)
1 tablespoon corn starch
salt & pepper
1 pint thick coconut milk mixed with 2 tsp lemon juice

In crockpot layer beef strips, onion rings and mushrooms. Make bouillon broth and add cornstarch, salt and pepper. Cook for 6-8 hours on low heat. When meat is tender, stir in coconut milk mixture.

Serve over gluten-free pasta or rice and garnish with fresh parsley.
