This recipe is great for a special occasion breakfast or for a tasty dinner.
4 medium yellow potatoes
8 strips bacon
1 small onion
1 teaspoon black pepper
1/2 teaspoon salt
Preheat oven to 450 degrees. Coat glass baking dish with spray canola oil. Cut yellow potatoes into thin slices and line the pan with two layers. Sprinkle potatoes with seasoning salt. Bake for 15 to 20 minutes until tender.
Prepare bacon by cutting in small pieces and frying over medium heat until done. Dice onion. In mixing bowl, beat eggs and add salt and pepper.
When potatoes are done, take out of pan and add diced onion, bacon, and eggs. Return pan to oven and bake for 10 minutes.
