Tummy Yummy Pancakes

Gluten-free oats make WONDERFUL pancakes!

2-1/2 cups gluten-free oats
6 egg whites
1 cup vanilla soy milk, rice milk or almond milk
1 tablespoon canola oil
1 teaspoon baking powder
1 teaspoon vanilla
1/2 cup applesauce

Mix all ingredients in a mixer or blender until smooth. Coat griddle or frying pan with cooking spray. When griddle is hot, pour a half cup of batter per pancake and cook until firm. Flip to finish. Top with your favorite syrup or jam. Try serving fruit on top, such as blueberries and bananas.
