6 medium sweet potatoes or large can yams
1 cup corn syrup
1/2 cup brown sugar
1/4 teaspoon salt
3 tablespoons butter
Partially cook unpeeled potatoes in boiling water. Cool and skin. Cut the potatoes in halves lengthwise or in three pieces if the potatoes are large enough. Start here for canned yams, sliced if necessary. Place in greased baking dish in one layer, not packing too closely. Make a syrup by boiling the corn syrup, brown sugar, salt and butter until fairly thick. Pour the syrup over the potatoes/yams. Place them in oven to brown for 30 minutes at 350 degrees. Turn potatoes/yams over carefully to brown other side and baste frequently with the syrup.
