Larraine’s Pizza Pie
Pie crust:
1 cup rice flour
1/2 cup tapioca starch
1/2 cup corn starch
1/4 cup sugar
1/2 Tbsp guar gum
1 tsp baking powder
1 tsp salt
1/2 cup canola oil
1 egg, beaten
1/2 Tbsp cider vinegar
1/2 cup cold water
Preheat oven to 400 degrees. Whisk together flours,sugar, guar gum, baking powder, salt and oil, until dough forms even balls. Make a hole in the center and add egg, vinegar and cold water. Knead about 2 minutes. Press dough evenly throughout pie dish, forming a ridge on the sides. Use thumb and fingers to make scallops on the edges. Bake for 15 minutes. Remove from oven.
In pie shell add:
15 oz can tomato sauce
1/2 Tbsp Italian seasoning
Meat toppings such as bacon, ham, sausage and chicken.
Vegetable toppings such as mushrooms, olives, onions and green pepper.
Top with 1 cup shredded mozzerella cheese.
Cover edges with foil to prevent overbrowning. Bake at 400 degrees for 15 minutes.
