Chicky Lime Taquitos


Taquitos are the perfect finger food for kids.

Marinade
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/8 cup olive oil
1/4 cup fresh lime juice

4 chicken breasts
3 tablespoons olive oil
1/2 teaspoon salt
2 teaspoons garlic powder
1 tablespoon crushed red pepper
1/4 cup onion, minced
1/4 cup fresh lime juice
18 corn tortillas
olive oil for frying

Combine first five ingredients in a zip-lock bag or plastic container. Add chicken and marinate in fridge for 2 hours. In olive oil, cook chicken and cut into pieces on medium heat until tender. Cool, then shred. Place chicken in bowl and sprinkle with salt and garlic. Add red pepper, onion and lime juice. Mix well. Heat oil in frying pan and warm one tortilla at a time. In baking pan, add spoonful of chicken to tortilla. Roll and secure with a toothpick. Bake at 400 degrees until taquitos are golden brown.

Serve with guacamole or salsa.
