Lime Apple Quinoa Salad

2 cups water
1 cup quinoa
2-4 apples, chopped
4 tablespoons honey
2 limes
1/2 teaspoon paprika

Bring water to a boil. Stir in quinoa and cover with a lid. Turn burner to low and simmer 15 minutes. Take off burner and let set 5 minutes. Fluff with a fork. Cover and chill. Remove from fridge and add apples and zest of 1 lime, plus juice of 2 limes. Add honey and paprika. Stir well. Cover bowl and chill until time to serve.
