Sliced Yellow Potato Bake

Yellow Potatoes
Red Bell Pepper
Mushrooms
Seasoning Salt

Spray baking pan (glass or metal) with canola oil spray. On cutting board slice mushrooms very thin. (I use about 6 to 8.) Cut, clean and slice red pepper into thin slices. Slice yellow potatoes (with skins on) very thin. Place potatoes in pan one layer at a time, adding a few mushrooms and red peppers. Sprinkle each layer with seasoning salt. Add layers of potatoes, mushrooms and red peppers. Depending on pan size and potato size, you will probably want three to five layers total. Heat oven to 400 degrees. Bake potatoes for about 40 minutes, or until potatoes are tender.
