3 medium sized sweet potatoes
2 Tbsp olive oil
3 Tbsp sugar
2 tsp cinnamon
Peel skins of sweet potatoes. Carefully slice sweet potatoes into ½ inch pieces. Lay foil on cookie sheet and spray with canola oil. Lay slices of sweet potatoes on sheet. Use 1 Tbsp of olive oil to brush over the fries. Combine sugar and cinnamon in small bowl or shaker and mix well. Sprinkle ½ the mix over the fries. Bake 15 minutes at 350 degrees. Take fries out of oven and turn each fry over. Spread remaining Tbsp of olive oil on fries and sprinkle with remaining sugar and cinnamon. Bake for 15 minutes more. When done, remove from pan and cool.
