Growing up my mom fixed breakfast for our big family every morning. The “big kids” had to leave early to catch the bus. My dad was a school teacher, so he had to be up and ready too. I loved all the variety that my mom served us. When she fixed waffles, I thought that was an extra special treat!

Try this delicious warm breakfast! These waffles have the sunshiny taste of citrus, plus an added texture and nutty taste from flaxseeds. Orange-Flaxseed Waffles

Make it extra tasty by adding sausage or bacon, and a bowl of fresh fruit!

My granddaughter often has pizza at preschool or birthday parties. I make individual pizza crusts, and store them in the freezer. It’s so easy to take one with her, to provide her with a gluten-free pizza crust! For snacks I make crackers from the same dough. To make these I use

Larraine’s Multi-Use Cheese Dough

This dough also makes delicious drop biscuits.

When I make individual pizza crusts, I use a small flat bowl (about 3″ to 4″) sprayed with canola oil. I shape the dough into crusts creating a small raised edge on the outside. I use a knife to loosen and then place pizza crusts on pan. I then sprinkle crusts with Italian seasoning and bake.

For crackers I use wax paper sprayed with canola oil. I roll out the dough about 1/4 inch thick. I use a knife to cut squares or cookie cutters, place on sheet and add garlic powder and Italian seasoning. I use a fork to lightly press a scalloped edge.

When I make drop biscuits, I add a little milk to make the dough wetter. I drop the dough with a spoon or with my hands and bake. They are so delicious with real butter!

My granddaughter was eating Fritos at the farmers market. I don’t think I’d tasted Fritos since I was small. Later that night I started to nibble. They were GOOD! The next day I was in the mood for something Mexican and spicy. This is what I came up with: Spicy Fritos Bake

When I eat Mexican – it always takes me back to my dad. He went on a small trip to Mexico to translate for his good friend. While he was there, among other souvenirs, he found a Mexican Ballads record that he brought home. I used to just giggle every time he’d play his record from his study! The music would float into the kitchen where my mom would usually be fixing dinner. She hated the music! It was so dramatic with guitar and trumpet, and I think that I, along with other siblings, could probably imitate that music to this day!

I know my dad loved Mexican, and I’m sure he would have loved this recipe! My own family sure did! So try it – but you don’t have to listen to silly music to enjoy!

Each year when I finally realize it’s September, which is usually towards the end of the month and I’m noticing I’m a little cold – I think SOUP! I have MANY favorite soups! Today I am thinking about Split Pea and Ham. This soup is done without too much work, and the help of a crock pot, to simmer it all day while you’re busy or away. This soup has wonderful texture from all the vegetables! If you really want a smoother soup, you can blend it some when it is fully cooked.

spaghetti-squash-with-sauce

A fun alternative to pasta is Spaghetti Squash. It is a winter squash, so is available about September. If you’ve never tried it – it’s really delicious, and a fun way to give your family a spaghetti dinner! The squash is hard to cut – be careful of your knife! I cut mine into four pieces then clean out the seeds, then steam in a pan of boiling water for 20 minutes.

When it’s done, cool it a bit then use a big spoon to scrape the “spaghetti” out of the skins. Serve with your favorite spaghetti sauce. Today I just browned a pound of ground beef, drained the liquid, then added a can of Hunts Spaghetti Sauce.
