Since I recently made peach jam, I was very hungry for something to eat with it. I’ve made my family very happy tonight with this batch of warm biscuits!

Getting used to wheat free flours is a TRICK! But if you’re a little daring, and can handle adding a little flour, then a little buttermilk, and so forth, you can do it. Also, rolling the dough out is a bit more trying than with wheat flour dough. It breaks more, but I just stick it back together! If you’re willing to put a little work into this – you’ll be happy you did – when you’re eating your warm, delicious biscuits! Here’s the recipe: Just Like Mom’s Biscuits

If you’ve never made jam, now is the time to try it! You can find wonderful fruit at fruit stands, farmers markets and even your grocery store. I had about 20 peaches. To make jam I also needed canning jars (or jelly jars), lemon juice (I use the kind in the bottle), pectin and LOTS of sugar. I also put a small jar of maraschino cherries in mine.

To make jam – buy the pectin first – it usually is sold in twos. Follow the directions in the pectin box. There are two ways of making jam. The quick and easy way is to make freezer jam. It’s very delicious, if you have room in your freezer.

I cooked my jam so it can be stored in my cupboard. Be sure to follow directions as to how many cups of fruit, lemon juice, sugar and pectin to use. I wanted to make my Mom’s peach jam that was my FAVORITE when I was young. I chopped the maraschino cherries and added them, plus part of the juice.

It’s fun to try any jam – whatever fruit is available to you. You may even find a new favorite!

In my niece Christine’s article – which is in my site when you click on Autism/ADHD, she talks about a suggestion she found in The Kid-Friendly ADHD and Autism Cookbook.

Picture a SQUARE MEAL. For this I bought easy to find (Walmart) divided plates for kids. When you picture a square, the right half should consist of vegetables; the left is split in two – one for good proteins and one for starches and fruits. (Fruits count as starch.)

I made two samples of this idea. The first has raw veggies – cucumber and tomatoes. The protein is Vienna Sausages, and the starch is fresh peach slices.

For the next, I’ve chosen green beans and olives for veggies; chicken nuggets (from my ebook – GFCF recipes for Special Kids) and applesauce for fruit.

These meals are easy to prepare with the “square” concept! Your own child may enjoy carrot sticks or corn, apple or orange slices, and even a peanut butter sandwich on a rice cake or gluten-free bread – it’s a great protein!

This is a SUPER EASY way to feed my granddaughter Joscelyn, who eats gluten-free. She loves the colorful divided plates, and how fun the food looks on it! She can’t resist eating these easy “square” meals.

Today my husband and I made our dinner together. He GRILLS; I cook. He was doing chicken, so I made him a marinade of balsamic vinaigrette, lemon juice, creamy honey and crushed red pepper. We had some Anaheim peppers and put them on the grill also. I found a crookneck and a zucchini squash, which I sliced and cooked in butter. Yes, BUTTER. I love the way it glazes the squash.

Our dinner turned out so delicious – I knew I’d have to share! If you haven’t cooked peppers on the grill, you’ve got to try it! The Anaheims were meaty with just enough of a kick! The trio of the marinated chicken, the Anaheims and the squash was an absolutely perfect dinner for us today!

I love leaving my honey with a satisfied tummy when he’s off to work, with a good memory of our meal we shared together.

We started making them “mini,” since we were sending them to places with my granddaughter who is gluten intolerant. These are great to give to a teacher to store in a freezer so your child will have a goody on special days. It’s a good idea to make a double batch to store in your freezer too. These are not just for little ones – my husband and daughter beg me to make them!   Mini Cocoa Cookies
