Summer Picnic Potato Salad

5 lb potatoes
salt as needed
1 dozen eggs
4 green onion
3 cups Kraft mayonnaise
1 Tbsp mustard
1/2 tsp celery salt
1/2 tsp dill weed

Using a vegetable rack in a large pan for boiling, wash and cut potatoes into quarters or six pieces, depending on size, leaving skins on. Turn burner on high until lid rattles, then leave on medium heat until potatoes are tender. Carefully drain water and place potatoes on baking sheet to cool. After cool, peel skins with a paring knife and slice potatoes into bite-size pieces. Place pieces into a large mixing bowl. After potatoes are prepared, salt well – I count to about 60 shakes (this will depend on your own salt shaker), and stir potatoes.

In another pan boil 12 eggs. When boiled, run under cold water. Peel eggs. In mixing bowl, shred eggs with a cheese grater. Finely chop green onions. Add mayonnaise, mustard, celery salt and dill weed. Stir well and add to big mixing bowl of potatoes; stir in well.

In an appropriately sized serving bowl, add the finished potato salad. Sprinkle top with parsley flakes and paprika for color. Keep in fridge until serving.

My daughter made tuna melts for her family. She made me these wonderful tuna melts, in a separate pan, on corn tortillas.

These tuna melt wraps are so easy to make. Just heat a frying pan on medium heat. Butter the outside of a corn tortilla. In the frying pan, sprinkle the tortilla with grated cheddar cheese and let it melt a bit. Spread tuna mix (made with Kraft mayonnaise) onto the tortilla and let the cheese melt fully. Fold tortilla in half.

These are DELICIOUS!!!

citrus-jello-surprise1

Need a quick and easy snack or dessert? Or a fun and tasty project for your little helper? Here’s a fun idea that’s also easy on the budget!

At the grocery store, collect one each of 3 oz lemon, lime and orange Jell-O. Pick your favorite 6 oz citrus yogurt – orange, lemon or lime (I bought Key Lime Pie) and buy two. In the paper and plastic section, find some 9 oz clear cups, then get a lemon and lime from the produce section. Now you’re set!

This is FUN for little helpers who love to STIR! Just be careful when pouring the boiling water, or carrying it to the freezer. They will LOVE watching as the pretty colors add up! And WHO doesn’t LOVE Jell-O?

Find Citrus Jell-O in Gluten-Free Recipes.

Rice Works can be found at Costco, Walmart, Kroger, Ralphs, Food 4 Less, Smiths and Jamba Juice, depending on what part of the country you live in.

My favorite are the SWEET CHILI, but they’re all delicious!

soup-hearty-vegetable

I just got a brand new crock pot, after living for five years without one, since my old one gave up. I immediately put it to use!

There are so many ways of combining things of which you probably have on hand, to make a wonderful hearty vegetable soup.

Today I used 2 cups of pinto beans that I had soaked overnight, fried one pound of ground beef, peeled and shredded potatoes (3 cups), carrots (2 cups), chopped one small onion and added canned peas. I poured one tall can tomato juice (V8 is great too) into my crock pot and then added the other ingredients. I then seasoned the soup with salt, pepper, one teaspoon celery salt, and added one cup water, then cooked it on low for 8 hours. It was thick and delicious!

It’s fun to be creative, and try different things, like using chicken or beef broth instead of tomato, using Knorr’s Caldo de Pollo or Res, and adding whatever vegetables, beans or gluten-free pastas you’d like.
