DSCI1048

I’ve always loved my sister Susie’s famous chili. She came up with it several years ago, while finding something that would be healthy, would be filling, and be low fat and low calorie. Now my daughter Kayli has been making it too! It’s simple and quick, and you can use a variety of meats, including lean ground beef, ground turkey or chicken, plus a variety of different beans.

For Kayli’s latest she used:

1 lg can diced tomatoes, blended in blender
1 can red beans
1 can black beans
1 lb lean ground beef
1/2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp onion salt

Brown meat in a frying pan and drain. Drain cans of beans. Combine all ingredients in a medium pan and heat through. This recipe can also be made in a crockpot and cooked on low for about 4 hours. Serve with your choice of toppings such as shredded cheese, sour cream, etc. (I have mine plain, since I eat casein-free, and it tastes delicious!) Makes 4 servings.

My family doubles this recipe to have leftovers for the next day! Susie’s suggestions are:

+ Use a can of diced tomatoes that are chili-style for more flavor, such as Hunts or Del Monte brand.

+ Rinse ground beef in hot water in a colander after browning to remove excess fat.

+ A favorite option: We also love chunks of chicken breast browned in a little hot oil (instead of ground meats) before adding other ingredients. It’s Delicious! (But don’t overcook it.)

+ I use quite a bit more chili powder and cumin – I like it spicy!

+ Also good on top of a bowl of salad veggies, as a taco salad. Add cheese, sour cream, and a few corn tortilla strips for crunch (I use Fresh Gourmet brand).

I recently received a letter from a mother of a son with autism. This is Jace. Isn’t he a beautiful boy? His mother is doing lots of research into making his life healthier and better. I am so happy to be able to help her with recipes for children on a gluten-free/casein-free diet. Click the link below to read more about him.

My family worked hard to give me a surprise birthday!

They kept me in the dark about my birthday dinner, my cake and my presents! Normally when I have a birthday there is no fuss, and so I wasn’t expecting any. But this time when dinner time got near, they began acting suspicious, and asking me to stay in my room. My 6-year-old grand daughter started telling me, with a funny smile on her face, “There’s no surprises!”

When it was dinner time, Joscelyn led me out of my room, and into the dining room, to my seat. I was very surprised to find that my husband had shopped at Costco for my favorite steaks and had cooked them to my liking on the grill. My daughter, Kayli had made home-style mashed potatoes, using red potatoes with the skins, with olive oil and rice milk to mash them, plus a little crushed red pepper, just the way I like them! She had also made a delicious vegetable salad, and had bought my favorite dressing – honey Dijon vinaigrette. My steak was cooked to my liking – medium rare, and topped with A-1 sauce. What a delicious birthday dinner!

Then they served my pink birthday cake! Since my birthday is in February, and falls close to Valentine’s Day, I’ve always loved having a pink cake! I enjoyed the Betty Crocker Gluten-Free cake that Kayli made me, substituting canola oil for the butter. She also used my casein-free recipe for frosting that can be found in the blog that is three down.

I was extra surprised when I was presented with my FIRST bike EVER!!!

Meatloaf wasn’t my favorite, but 4 years ago I started using this recipe. I love it because it’s both QUICK and DELICIOUS! Now I love it, and my family loves it too! I have two versions in my Gluten-Free recipes. One under “Poultry” using ground turkey is “Low-Cal Turkey Meatloaf.” Another in “Beef” uses ground beef and sausage for a spicier version and is “Spicy Salsa Meatloaf.”

Here is the basic recipe:

2 lbs ground beef or ground turkey
1 onion, diced
1 pkg Knorrs Vegetable Recipe Mix
3 eggs
1 cup salsa
1 cup gluten-free oats
1 cup ketchup

In large bowl mix together meat, onion, Vegetable Recipe Mix, eggs, salsa and oats, using a big mixing spoon. Separate the mixture into two breadpans. Divide the ketchup over the top of the two and spread. Bake at 350 degrees for 50 minutes.

The Knorrs Vegetable Mix can be found by the soups in most stores.

My family loves this served with homestyle mashed potatoes or rice.

manwich

I have always LOVED eating Manwich! But I don’t really like gluten-free hamburger buns. Recently I purchased a case of Manwich, and am enjoying different meals with it!

A really delicious one is using Manwich, instead of soup to make what some call a “Shepherd’s Pie.” I peel and steam some potatoes (about 4 or 5) until tender, then make mashed potatoes my adding a little olive or canola oil and some rice milk. I brown a pound of ground beef, drain and add the Manwich. Then stir in one can of drained green beans. In a oven-baking dish, first put the Manwich, ground beef and green bean mixture. Top with the mashed potatoes. (If you are not eating casein-free, you can add grated cheese to the top!) Bake at 350 degrees for about 1/2 hour.

Another way I enjoy Manwich is to cook some short-grain brown rice, and have my Manwich and ground beef mixture with it. Manwich goes well with brown rice. I LOVE the chewy texture!

My family loves both of these Manwich dinners. Kids love Manwich too. Let me know if you have a Manwich recipe idea. I’d LOVE to hear from you!
